Rich and soft chocolate sugar free cookies made with Russell Stover Sugar Free Baking Chips.
Let’s talk about this recipe for a minute. The dough contains a cup of unsalted softened butter. Don’t try to melt the butter too much. It will give you a higher, more cake like texture overall result. If you find that the dough is too sticky, add a little bit more flour.You should be able to form it into a ball with your hands but it should still be easy to handle. Last but not least, I decided to mix in the dough both the semi sweet and the dark baking chips. It created a unique mixture of flavors. You’re welcome to do the same. Just remember to do half and half of each baking package.
Take care not to under or over bake them. You’ll know the cookies are done when the edges are set and the centers are soft but not gooey, about 8-10 minutes.
Let them cool on the sheets for 2 minutes before transferring them to a wire rack to cool completely, or long enough to not burn your tongue! Serve with a tall glass of milk and enjoy!

Sugar Free Chocolate Chip Cookies
Ingredients
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup unsalted batter softened
- 2/3 cup brown sugar alternative blend for baking
- 1/4 cup granulated sugar alternative blend for baking
- 2 large eggs
- 1 tbsp pure vanilla extract
- 1 8 oz Package Russell Stover Sugar Free Semi-Sweet Style Baking Chips
Instructions
- Preheat oven oven to 375°F (190°C). Line cookie sheets with parchment paper.
- In a small bowl, whisk together the flour, baking soda and salt; set aside.
- In a mixing bowl, using an elecrtic mixer at medium-high speed beat together, the butter, brown sugar alternative and granulated sugar alternative untill creamy, about 2 minutes. Beat in eggs, one at a time, beating well after each addiction. Beat in the vanilla. Beat in the flour mixture. Stir in the baking chips
- Drop by rounded tablespoons onto the prepared cookie sheets. Bake for 8 to 10 minutes. Allow cookies to cool down for 2 minutes then move to a wire rack to cool completely.
