New recipe on the blog! Crunchy, salty, and utterly addictive, fried zucchini blossoms make for a delicious starter! One of my favourite dishes🍴 You can eat them like candies; they are that good 😋
INGREDIENTS
- Vegetable oil (for frying)
- 1 1/4 cups all-purpose flour
- 2 large egg yolks
- 1 teaspoon kosher salt
- 12 ounce weiss beer
- Zucchini blossoms (stamens removed; about 2 dozen)
- Sea salt
- Basil
- Anchovies
- Mozzarella
PREPARATION
Gently open each zucchini blossom and nip off the stamen. Place a piece of mozzarella, anchovies and basil inside each blossom and twist lightly to close. Pour 3 inches of oil in a deep fryer or large, heavy pot and heat to 375 degrees F/ 180 decrees C. In a deep mixing bowl, lightly beat the egg yolks and pour in the ice water; mix to combine. Add the flour and continue to mix until the batter is the consistency of heavy cream. Dip 2 zucchini flowers at a time in the batter to coat completely, letting the excess drip off ( this is important to prevent hot oil splashing ). Fry the flowers in the hot oil for 2 minutes until crisp and golden brown. Drain the fried flowers on a platter lined with paper towels, season with salt and pepper while they are still hot. Repeat with the remaining zucchini flowers.
NOTE:
If you don’t like anchovies or mozzarella you can always use other ingredients such as ricotta and ham. There’s a variety of combination, just try it!
