Spaghetti with Tomato Sauce

Ingredients

  • 320 gr spaghetti
  • 400 gr tomatoes
  • 1 clove garlic
  • olive oil extra virgin
  • 30 gr salt coarse salt

Instructions

  • Fill a large pot with plenty of water and bring it to a boil over high heat. When the water is starting to boil add the salt. To properly salt the water you will need about 30 grams of coarse salt. Dip the spaghetti in the water when it starts boiling again, without breaking them.
  • Take a clove of garlic and leave it without peeling it. In this way the flavor of the garlic will remain more delicate. Crush the garlic clove with the help of the knife and keep it aside.
  • Take a large pan and heat it on a medium heat. Add a little extra virgin olive oil and add the crushed garlic clove without peeling it. Heat for about 4 minutes, then remove the garlic.
  • Put the peeled tomatoes in a large bowl and mash them. You can use a fork to do it, but it would be better to use your hands. Put all the content of the bowl in the pan where you cooked the garlic, leaving a moderate heat. Cook for a few minutes.
  • Once you are halfway through cooking the pasta, drain it directly into the pan with the tomato sauce. Remember to keep the hot water where you cooked the pasta in order to make the final result creamier. Now finish cooking the pasta in a pan with the tomato sauce.
  • Towards the end of cooking the pasta, add the basil leaves in the pan keeping some to add later. Mix the pasta well, if necessary add a little more cooking water. Put the tomato pasta on the plate with a drizzle of extra virgin oil and fresh basil for decoration.
