Sugar Free Chocolate Chip Cookies

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted batter softened
  • 2/3 cup brown sugar alternative blend for baking
  • 1/4 cup granulated sugar alternative blend for baking
  • 2 large eggs
  • 1 tbsp pure vanilla extract
  • 1 8 oz Package Russell Stover Sugar Free Semi-Sweet Style Baking Chips

Instructions

  • Preheat oven oven to 375°F (190°C). Line cookie sheets with parchment paper.
  • In a small bowl, whisk together the flour, baking soda and salt; set aside.
  • In a mixing bowl, using an elecrtic mixer at medium-high speed beat together, the butter, brown sugar alternative and granulated sugar alternative untill creamy, about 2 minutes. Beat in eggs, one at a time, beating well after each addiction. Beat in the vanilla. Beat in the flour mixture. Stir in the baking chips
  • Drop by rounded tablespoons onto the prepared cookie sheets. Bake for 8 to 10 minutes. Allow cookies to cool down for 2 minutes then move to a wire rack to cool completely.

Notes

The cookie dough can be made ahead and refrigerated for up to 3 days. Make sure to cover and wrap the dough really well.
