Ingredients for the chocolate cake
- 1/2 cup all-purpose flour
- 1/4 cup cup cocoa powder
- 3/4 tsp baking powder
- baking soda a pinch
- 1/8 tsp salt
- 2 eggs whites room temperature
- 75 gr powdered sugar
- 2 egg yolks room temperature
- 1 tsp vanilla extract
- 6 tbsp oil I used olive oil
Ingredients for whipped cream
- half cup chilled heavy whipping cream
- vanilla extract to your liking
Ingredients for toppings
- 1/2 cup berries/fruit of your choice I used a combo of blackberries and raspberries
- grated dark chocolate to your liking
- powdered sugar to your liking
First of all, you will grease 6” cake pan and set it aside.
In a bowl mix all the dry ingredients (flor, cocoa powder, baking powder, baking soda and salt) and set it aside.
Beat your egg whites till they are fluffy. Add the powdered sugar gradually. Beat the egg whites till they are glossy. Continue adding the egg yolks and the vanilla extract. Beat them in. Gradually add the oil and beat the mix for 1/2 minutes.
Add the dry ingredients. Fold them lightly using a spatula. Make sure to be gently and don’t over mix it. - Pour all in the pan and bake it in a preheated oven for 180 C /350 F for about 20-25 minutes.
Meanwhile, whip your cream. Place the cream and vanilla extract in a large mixing bowl. Using a hand mixer, whip the cream until light and fluffy.
Place your cake on a serving plate or cake stand. Using a spatula, gently spread the whipped cream on top of the cake in an even layer.- Top the cake with your berries/fruit. Slice and serve!
